APPLE AND CINNAMON SCONES

INGREDIENTS


2 cups flour (plus a little for dusting)
2 teaspoons yeast
1 teaspoon cinnamon
½ teaspoon salt
5 tablespoons cold unsalted butter
½ cup milk (plus 2 tablespoons for brushing)
1 large egg
⅓ cup sugar (plus a little for sprinkling)
1 teaspoon vanilla essence
½ cup peeled and chopped apple

INSTRUCTIONS


STEP 1
Preheat the oven to 200ºC and line a baking tray with baking paper.

STEP 2
In a large bowl, combine the flour, baking powder, cinnamon and salt.

STEP 3
Add the cold butter to the flour mixture and mix with your hands until crumbly.

STEP 4
In another bowl, beat ½ cup of milk, the egg, sugar and vanilla.

STEP 5
Pour the liquid ingredients over the dry ingredients, add the apple and stir until everything is well incorporated.

STEP 6
Place the dough on a floured surface and form a disk about 20 cm in diameter. Cut it into 8 slices.

STEP 7
Brush the slices with the remaining milk and sprinkle with sugar.

STEP 8
Place the slices on the baking tray and bake for 20 to 25 minutes, until golden brown.

STEP 9
Let it cool for a few minutes and serve with butter and jam.
