VALENTINE’S DAY BRUNCH
BANANA BREAD
This Valentine’s Day, celebrate love with a homemade brunch – Banana Bread with Chocolate and Pecans, tea or coffee, fresh fruit, and yogurt. Simple, delicious, and served with care on COSTA NOVA collections.

Banana Bread with Chocolate and Pecans
300g all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 pinch fleur de sel
100g light brown sugar
1 tsp cinnamon
2 large eggs (lightly beaten)
150 ml natural yogurt
50 ml extra virgin olive oil
2 large bananas (mashed)
75 g dark chocolate (chopped or chips)
75 g pecans (chopped)
Banana Bread with Chocolate and Pecans

Preparation
STEP 1
Preheat the oven to 180ºC (350ºF) and line a loaf pan with parchment paper.
STEP 2
In a Pacifica mixing bowl, combine the flour, cinnamon, sugar, salt, baking powder, and baking soda.
STEP 3
In another Pacifica bowl, mash the bananas and mix with the eggs, yogurt, and olive oil.
STEP 4
Gently fold the wet ingredients into the dry ones, stirring just until combined. Add the chocolate and pecans.
STEP 5
Pour the batter into the pan and bake for about 50 minutes, until golden and cooked through.
STEP 6
Let cool in the pan for 10 minutes before transferring to a wire rack.
