CHOCOLATE CAKE WITH CHOCOLATE GANACHE

INGREDIENTS


For the cake
1 cup strong coffee
10 tbsp unsalted butter
¾ cup cocoa powder
3 eggs
½ cup plain yogurt or sour cream
2 cups sugar
3 cups all-purpose flour
1 tsp baking powder
1 pinch of salt

For the ganache
1 cup semi-sweet chocolate chips
¾ cup heavy cream

INSTRUCTIONS


STEP 1

In a saucepan, heat the coffee with the butter and cocoa, stirring until melted and smooth. Let cool for 10 minutes.

STEP 2

In a large bowl, beat the eggs with the sugar until light and fluffy. Add the yogurt and mix in. Slowly fold in the cooled cocoa mixture. Sift the flour with the baking powder and salt, and gently incorporate into the batter.

STEP 3

Preheat the oven to 180 ºC (350 ºF). Grease a Bundt pan and pour in the batter. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

STEP 4

For the ganache, heat the cream and pour it over the chocolate. Let sit for 1 minute, then stir until smooth and glossy. Allow to cool slightly.

STEP 5

Drizzle the ganache over the cooled cake, letting it gently run down the sides. Leave to set for a few minutes.

STEP 6
