CARAMELIZED PEARS WITH FARÓFIAS

Light, airy, and subtly sweet, the whipped egg whites provide the perfect canvas for the warm, golden pears — turning humble ingredients into a dessert that’s both elegant and comforting.

INGREDIENTS

2–3 pears
3 tbsp sugar
1 tbsp butter
2 egg whites
2 tbsp sugar (for the meringue)
Milk (for poaching)
Cinnamon to taste

INSTRUCTIONS


STEP 1 Peel the pears and boil them until tender. STEP 2 In a pan, cook the sugar and butter until it forms a golden caramel. STEP 3 Whip the egg whites with the sugar until stiff peaks form. STEP 4 Poach spoonfuls of the meringue in hot milk for 1–2 minutes. STEP 5 Serve the pears with the farófias, and drizzle with the caramel. STEP 6 Sprinkle with cinnamon to taste.

*Farófias is a traditional Portuguese dessert made from whipped egg whites that are poached in milk.
