Roast turkey is a classic that brings families together for long autumn gatherings and the star of Thanksgiving.
Golden and crisp on the outside, juicy on the inside, it's at its best when infused
with fragrant herbs and served alongside seasonal vegetables.

INGREDIENTS
FOR THE CAKE
1 ⅔ cups all-purpose flour
¾ cup granulated sugar
½ cup unsalted butter, softened
3 eggs
½ cup milk
2 tsp ground cinnamon
1 ½ tsp baking powder
1 tsp vanilla extract
Pinch of salt
FOR THE ICE
1 ¼ cups powdered sugar
2–3 tbsp milk
½ tsp vanilla extract

STEPS
STEP 1
Preheat the oven to 180°C / 350°F.
Grease and line a round cake tin.
STEP 2
Beat the butter and sugar until
light and creamy.
STEP 3
Add the eggs one at a time, mixing
well after each addition. Then, add the vanilla.
STEP 4
In a separate bowl, combine the
flour, cinnamon, baking powder and salt.
STEP 5
Gradually add the dry ingredients to
the batter, alternating with the milk. Mix just until combined.

STEP 6
Pour the batter into the prepared tin and bake for 35–40 minutes, or until a skewer inserted into the center comes out clean. Leave to cool completely before icing.
STEP 7
To make the icing, gradually add the
milk to the icing sugar until you have a thick glaze. Stir in the vanilla.
STEP 8
Spread generously over the top of
the cake, leaving the surface smooth and imperfectly dripping to the sides.
STEP 9
Serve in a Pacifica Trees footed
plate.
